A FINE dining restaurant has got off to a frying start in 2015 with the return of a travelling Leigh chef.

Nuvo opened on the site of the former Jasmin Garden restaurant at the end of December after Feret Bala, who also owns La Sirena on Leigh Road, gutted and refurbished the Leigh Broadway unit.

Behind the restaurant’s luxurious but affordable menu is Leigh head chef Eugene Collum, 48, who has returned to his hometown after developing his career in London, Belgium, Italy and Switzerland.

Mr Collum said the restaurant’s menu, an eclectic combination of high European cuisine, had been influenced by his travels.

He said: “My emphasis has been on creating something different, something people have never seen before, using fresh ingredients to create good quality food at a reasonable price.

“We go to the market three or four times a week and the menus are based on what we find and what’s in season at the time.

“It’s always a tough market to crack but we’ve had positive comments from people so far and they appreciate trying something new.”
